"More cider vinegar is produced in Chicago every year than all the rest of the United States put together, and more than in all of Europe. The five big concerns which lead in the manufacture of cider vinegar produce about 465,000 barrels of cider vinegar. In addition there are also produced about 100,000 barrels of cider. Some of the firms do an extensive business in compressed yeast in connection with their vinegar and cider and some combine pickles leaving out the yeast. With one city ahead, Chicago is a good second in the production of yeast, but in pickles this city is preeminently first. From the earliest days the soil of Cook County has been very fertile when it comes to cucumbers, and probably more pickles were produced in Cook County than in any other county in the United States. Other localities have endeavored to compete with Cook County, but they have never been able to do so successfully, and Chicago has remained far in the lead in this industry."
