INTRODUCTION
Buying a gallon of milk has never been easier. Walk into any grocery or convenience store and grab a plastic or waxed paper container from the cooler and you are on your way. In thinking of the milk business today, you would probably envision hundreds of milk cows grazing on vast fertile fields owned by nameless conglomerates. Most small family dairy farms-those with only a handful of cattle are gone. Twice a day now, cows are mechanically milked in large barns. That starts a modern state-of-art journey which converts this natural white liquid into avariety of well-known forms: whole, 2%, 1%, skim, and lactose-free milk; light and heavy cream; yogurt; butter, margarine, and spreads; ice cream; and cheese of all descriptions. But, as is invariably the case, it was not always quite that sophisticated.
